What’s for supper… | Zuppa Du Jour

i saw a couple different posts about people wanting dinner ideas this afternoon/evening ~ so i decided to share what is for supper at my house… which just so happens to be my absolute FAVORITE recipe for a quick and easy, delicious dinner on a cold day! A cold frosty night, homemade soup, a loaf of bread and maybe a video?? mmmm…

Zuppa Du Jour

6 slices bacon, chopped (i usually double this 😉 )

2 medium onions

3 stalks of celery, chopped

3-4 cloves of garlic (always 4-6 for me 😉 )

1/4 TSP. each – marjoram, thyme

1/2 TSP. each – oregano, rosemary

2 TBSP. chopped fresh basil (or 2 TSP dried)

1/4 cup chopped fresh parsley

1/2 TSP. hot red pepper flakes (i always double or triple this)

5 cups of chicken broth

28oz can of chopped Italian tomatoes

2/3 cup baby shell pasta

14oz can of artichoke hearts (12-13 count, drained and cut into wedges)

salt and pepper to taste

grated parmesan cheese to top (This is KEY!)

in a large heavy pot, cook bacon, onions, celery, garlic, herbs and hot pepper flakes, until onions are softened. stir in broth and tomato’s. bring to boil. add pasta. reduce heat and simmer, uncovered 10minutes, or until pasta is just tender. stir in artichokes and season to taste. serve with a sprinkling of parmesan cheese. serves 6. –

 

 

…and even better – this is even a weight-watchers soup!! … guess that is why my dad always tells me to triple the bacon 😉 haha!
